What this sheet is for

Settle who has what before the briefing and pin it where everyone can see it, so nobody asks mid-service and no table is left without a server.

Who it is for

Restaurant managers, head waiters and head chefs planning a service, and hotels and event venues staffing a room from a changing pool of people.

How to use it

  1. Fill in the date, service and covers booked.
  2. Divide the floor into sections and write the tables each one holds.
  3. Put a server and, where you have one, a runner against each section.
  4. Allocate the kitchen stations and the other posts — host, bar, pass, wash-up.
  5. Write in break times so cover is arranged rather than hoped for.

What is on the sheet

One page, top to bottom:

Printed under the title: Who has which tables and which stations for one service — floor sections, kitchen stations and the posts in between — pinned up before the briefing so nobody has to ask.

Your call, written down. How many tables one server can carry, and how many covers a station can put out, is your judgement for the room and the team on the day. This is the plan you settled on, written where everyone can see it.

Questions

How many tables should one server take?

That depends on your menu, your room and the server, so the sheet does not say. It gives you the plan you decided on for the day, written down where the team can read it.
