What this sheet is for

Give the floor one page that says what the kitchen is doing today, so the specials are described the same way at every table.

Who it is for

Restaurant managers and head chefs who brief before each service, and the front of house teams who need something to read again at the pass at nine.

How to use it

  1. The kitchen fills in the specials: dish, what is in it, allergen flags from your matrix, price and portions.
  2. List anything off the menu today and what to suggest instead.
  3. Add the bookings the floor needs to know about — large parties, occasions.
  4. Brief the team, and write in who was there.
  5. Cross through a special when it sells out so the sheet stays true.

Questions

Where do the allergen flags come from?

From your own allergen matrix, filled in by the kitchen. The sheet gives the floor a column to read from; it does not decide what is in a dish.

Why record who was at the briefing?

Because a special described wrongly at a table usually traces back to someone who arrived after the briefing. Knowing who heard it tells you who needs a quiet word at the pass.
