What this sheet is for

See where a slow service actually slowed — which course, which section, which table — from the times themselves rather than the argument afterwards.

Who it is for

Head chefs and sous chefs running a pass, restaurant managers who want the kitchen and the floor looking at the same numbers, and anyone opening a new menu.

How to use it

  1. Fill in the date, service and covers so the times have context.
  2. Write each ticket as it prints, with the time in.
  3. Add the time it was called away, the time the first plate hit the pass and the time it left.
  4. Work out the wait in minutes and note anything that held the ticket.
  5. Look at the sheet after service, not during it, and compare it with your own target.

What is on the sheet

One page, top to bottom:

Printed under the title: Every ticket through the pass in one service — when it came in, when it was called, when it left, and how long the table waited — so a slow service can be traced to the course that held it up.

Minutes, not a target. What counts as a long wait is your call and depends on the menu and the room. This sheet gives you the actual minutes, ticket by ticket; compare them against your own target and the covers you were running.

Write-on lines: Restaurant · Date · Service · Covers · Pass run by

Table, 15 rows: Ticket · Table · Covers · Time in · Called · On pass · Away · Wait (min) · Hold-up / note

Questions

What is a reasonable wait time?

That depends on your menu, your room and what you promise guests, so the sheet does not print one. It gives you the real minutes for every ticket; set your own target and see which tickets missed it and why.
