What this sheet is for

Follow a tank of juice back to the block, the day and the pickers it came from, and see the yield of every press load without going back through the cellar book.

Who it is for

Small vineyards and hobby winemakers who pick their own fruit and press it on site or at a shared facility.

How to use it

  1. Fill in the vineyard and vintage once; use a fresh sheet per vintage or per variety.
  2. Log each block as it is picked: date, rows, variety, pickers, crates and weight, your own ripeness reading, and the state of the fruit.
  3. For each press load, note which picking it came from, the weight in and the juice out, and which tank or barrel it went to.
  4. Work out the yield and keep the sheet with the cellar records for that vessel.

What is on the sheet

One page, top to bottom:

Printed under the title: A vintage in two tables — what was picked from each block and when, and what each pressing took in and gave out — so a tank of juice leads back to the rows it came from.

Write-on lines: Vineyard · Vintage · Recorded by

Questions

Why is there no ripeness target or press programme printed?

Because when to pick and how hard to press are the winemaker's decisions for that fruit in that year, read off your own instruments. The sheet has a column for the reading and the cycle you chose; it does not tell you what they ought to be.

Can it be used for cider apples or other pressed fruit?

Yes. The block-to-press link is the same; only the words variety and vineyard need reading a little loosely.
