Answer 'what is in this and how do you know' with a sheet rather than a memory, and notice when a supplier's change should change your label.
Makers who sell packaged or labelled food — bakers, chocolatiers, sauce and preserve makers, market traders — and anyone who has to answer an allergen question at a counter.
2 pages, in this order:
Printed under the title: One product, ingredient by ingredient: where each one came from, what the supplier declares for it, and what that adds up to on your own label. Redo it when a supplier or an ingredient changes.
Your list of allergens, not ours. Which allergens have to be declared, and how, is set by the rules where you trade — write in the allergen names from your own list rather than relying on memory. The supplier's declaration is theirs; keep the specification or a copy of the label it came from with this sheet.

Because which allergens have to be declared, and by what name, differs by country and changes over time. Printing one list would be wrong somewhere. Write in the list from the rules where you trade.
Write that down as the answer — a blank is not the same as 'none'. Then ask them in writing, and keep the reply with this sheet.

Keep one grid that anybody taking an order can read, instead of a set of recipe cards nobody has time to look through during service.
Keep the ordering knowledge out of one person's head and on a page anybody could pick up.
Work out what a dish actually costs to make as you make it, including the trimmings, so a price is set from a figure rather than a feeling.
Every sheet, binder, game and puzzle on Upkeep Papers is free to download, with no email and no account. Making them is not free: each one takes days of research, design and checking, and the site costs money to run. If something here saved you time, you can buy us a coffee. It is entirely optional: nothing is locked, and nothing changes if you don’t.
