What this sheet is for

Turn the orders book and the shop's usual sales into a list the night shift can work from, and see the next morning where the plan and the bake disagreed.

Who it is for

Small and micro bakeries, home bakers supplying shops or cafés, and anyone planning a bake for more than one customer.

How to use it

  1. Fill it in the evening before, product by product, from the orders and what the shop usually sells.
  2. Write the mix-by and out-by times you need to hit for this bake — working back from opening or the van.
  3. Put a name against every line so nobody assumes someone else is making it.
  4. Write the actual units out as each product comes off, and compare in the morning.

What is on the sheet

One page, top to bottom:

Printed under the title: Tomorrow's bake on one sheet: every product, how many batches, what that makes, who it is for and who is making it — written the night before and ticked off as it comes out of the oven.

Your times, written in. Mixing, proving and baking times are yours, from your own recipes and your oven. The two time columns are for the times you set for this bake, so the plan works backwards from when the shop opens or the van leaves.

Write-on lines: Bakery · Bake for (date) · Planned by · Baker(s) · Orders checked against the book · Flour and stock checked · Ovens and mixers ready · Short of

The plan — one line per product — the actual column is filled as it comes out

Table, 11 rows: Product · Batches · Makes · Orders · Shop · Mix by · Out by · Made by · Actual

Questions

Why are there no proving or baking times printed?

Because they belong to your recipes, your flour and your oven, and no two bakeries share them. The time columns are for the times you set for this bake, not times we suggest.
