What this sheet is for

Show for any cheese, yoghurt or ice cream batch which milk went into it, from whom, and that it was checked at the door against the limit you set.

Who it is for

Farmhouse cheese makers, micro-dairies, ice cream and yoghurt makers taking milk from their own parlour or from a neighbouring herd.

How to use it

  1. Write your own intake limit in the blank at the top, from your hazard plan and the rules where you trade.
  2. Log every churn, tank or tanker as it arrives: source, volume, the reading, and whether it looked and smelt right.
  3. Tick whether any intake test was done; keep the result on the paperwork it came from.
  4. Mark accepted or not, and sign the row.
  5. File the month with the batch records it feeds.

What is on the sheet

One page, top to bottom:

Printed under the title: Every delivery or collection of milk into a small dairy, cheese room or ice cream kitchen — who it came from, how much, what it read on arrival against your own limits, and whether it was accepted.

Your limits, not ours. The reading on arrival is written against the limit you set — from your own hazard plan and the rules where you trade — and that limit is the blank at the top, not a number printed here. Anything you test for on intake goes in the test column as done or not done; the result belongs on the lab or kit paperwork it came from.

Questions

Why is there no acceptance temperature printed?

Because the limit you accept milk at is set by your own hazard analysis and the rules where you trade, and this sheet cannot know either. The blank at the top is for that figure so every reading below is judged against it.

Does this replace the parlour's own milk yield record?

No. The dairy milk yield record is about the cows and what they gave; this is about what came through the dairy door and was accepted for making.
