Catch a shortfall at the count, where it is a number on a sheet, rather than weeks later when the margin has already gone.
Bar managers and anyone responsible for stock control behind a bar.
One page, top to bottom:
Printed under the title: A full count of everything behind the bar — spirits, wine, bottled beer and soft drinks — opening and closing stock against what was delivered, so a shortfall shows up at the count rather than at the end of the month.
Counted in bottles and part-bottles. Count spirits to the nearest tenth of a bottle, using your own optics or a stocktake measure; count wine, beer and soft drinks by whole bottle or case. How often you stocktake, and what you count as an acceptable variance, is your own house routine.
Write-on lines: Bar · Stocktake date · Counted by · Checked by

That sheet tracks when each keg or cask was opened, for rotation and freshness. This is a stock count across the whole bar — spirits, wine, bottled beer and soft drinks — for working out what was actually used against what was sold.
No. What counts as normal wastage versus a problem worth investigating is for your own house to decide, based on your own history — this sheet only gives you the number to judge it by.
Keep the oldest container next on and nothing sold past the brewery's date, with a week-end count of full stock, empties and returns that a stock take can use.
Cash up a bar with several tills so that a short drawer is found on the night and has a till and a shift attached to it, instead of vanishing into one bag.
Find the optic that is short-pouring and the rail that is over-pouring before the stocktake finds them for you.
Keep one master sheet behind the printed list, the cellar shelves and the till, so a bin number means the same wine in all three places.
