What this sheet is for

Find the optic that is short-pouring and the rail that is over-pouring before the stocktake finds them for you.

Who it is for

Bar managers, licensees and stocktakers in a pub, bar or hotel bar, and anyone who has to explain a gap between spirits bought and spirits sold.

How to use it

  1. Write the measure the bar sells in and what you tested with at the top.
  2. Work along the back bar, one line per optic or free-pour position.
  3. Note the bottle level, then make three test pours and record each.
  4. Mark the result as ok, short or over, and what was done about it.
  5. Both the checker and the manager sign at the foot.

What is on the sheet

One page, top to bottom:

Printed under the title: A pour check on each optic and free-pour spirit — the measure it is meant to give, what a test pour actually gave, and what was done about any that ran short or over.

Your measure, your test. The measure a spirit is sold in is set by the rules where you trade and by your own drinks list, and the test equipment you use is yours. Write the measure the bar sells in at the top and the result of each pour beside it; this sheet holds no figure of its own.

Questions

Why is the measure size not printed?

Because the measure a spirit is sold in is set by the rules where you trade and by your own drinks list, and both differ from bar to bar. The sheet has a box for the measure you sell in and takes it from there.

What should I test with?

Whatever your bar uses to check pours — a stamped measure, a thimble or a measuring glass. Write it in the box so the next person checks the same way.
