What this sheet is for

Turn the night-before prep and the morning load into one ticked sheet. What came back sets a better number next time.

Who it is for

Food truck and trailer operators, street food traders and mobile caterers working from a prep kitchen.

How to use it

  1. Fill in the trading day and the pitch or event at the top.
  2. List each prep item with the quantity you have decided to make.
  3. Tick made and chilled as you go, and write the container and date label used.
  4. Tick every item on the load list before the truck leaves.
  5. Write what came back unused so the next prep list starts from real numbers.

What is on the sheet

One page, top to bottom:

Printed under the title: Tomorrow's prep list and the morning's load list on one sheet: what to make, how much, and everything that goes on the truck.

Your numbers, from your last trade. Quantities are yours: how much to prep depends on the pitch, the weather and last time's leftovers. There is a column for your number and one for what came back, so next week's number is better.

Questions

Why are there no quantities on the sheet?

Because how much to prep depends on your pitch, the weather and what came back last time. The sheet gives you a column for your number and a column for what returned, which is how the number gets better.

What about temperatures on the day?

Keep those on your Food Temperature Record. This sheet is about what was made and what was loaded, not the readings taken while trading.
