Give the service a number: how many covers actually sat, how many tables turned, how many walked away, and where the room stalled.
Restaurant managers, hosts and front-of-house supervisors who need to know how the room ran, not just how it was booked.
One page, top to bottom:
Printed under the title: Every table across one service — when it was seated, how many covers, when it was cleared and reset, and whether it turned — totalled at the bottom so the night has a number.
What happened, not what was planned. How many times a table ought to turn, and how long a table is allowed, is house policy and depends on the menu and the room. This sheet counts what happened; compare it with the reservation diary to see where the room was left waiting.
Write-on lines: Restaurant / room · Date · Service · Manager on · Covers booked · Walk-ins expected · Tables in use · Sections open
Table, 10 rows: Table · Seated at · Covers · Booked / walk-in · Server · Mains away · Cleared · Reset · Turn no. · Notes
Write-on lines: Total covers served · Tables turned · No-shows · Walk-ins seated · Walk-ins turned away · Longest wait
That is house policy. It depends on the menu, the room and how long you give a booking. This sheet counts the turns that happened so you can see the pattern over a month; it does not say what the number ought to be.
Because the gap between them is where a room loses covers. A table that is cleared promptly but sits unreset for a while looks the same on a booking sheet as one that turned fast, and it is not.

Count a drawer properly and record the variance, so a pattern of small differences becomes visible instead of being quietly absorbed.
Keep phone and counter orders in one numbered list so the bag matches the customer, the promised time is written down and nothing is left under the lamp.
Cash up consistently and record the difference every day, which is how a problem gets noticed in a week rather than in an audit.

Making them is not free: each one takes days of research, design and checking, and the site costs money to run. If something here saved you time, you can buy us a coffee. It is entirely optional: nothing is locked, and nothing changes if you don’t.
