Grease Trap Maintenance Log

A free printable grease trap maintenance log: inspections and clean-outs with grease and solids depths, who did the work and the waste ticket number.

First page of the Grease Trap Maintenance Log — Trace a blocked drain back to the last clean-out, with every waste ticket to hand. It is also the record the water authority will ask to see.

What this sheet is for

Trace a blocked drain back to the last clean-out, with every waste ticket to hand. It is also the record the water authority will ask to see.

Who it is for

Restaurants, takeaways and institutional kitchens with an under-sink grease trap or an external interceptor.

How to use it

  1. Fill in the trap's location and size, and the clean-out trigger and interval your authority or the maker sets.
  2. At each inspection, measure the grease layer and the solids at the bottom the same way every time.
  3. When it is emptied, record who did it, how much was removed and the ticket or receipt number.
  4. Note the condition of the baffles and lid, and go through the kitchen habits with staff at the interval you choose.

What is on the sheet

2 pages, in this order:

Page 1

Printed under the title: Every inspection, clean-out and service of the kitchen's grease trap or interceptor: the depths as measured, who did the work and the ticket for what was taken away.

Your own trigger and interval. No clean-out intervals or fill levels are printed. When a trap needs emptying may be set by your water company, council or sewer authority, or by the trap's maker. Write the trigger and interval you work to, and who set them, and check the rules where you are. Measure the same way every time so the depths can be compared.

Write-on lines: Kitchen or site · Trap or interceptor location · Size or capacity · Contractor and phone · Clean-out trigger · Interval · Set by · Permit or reference no.

Inspections and clean-outs — depths in the same unit every time

Kitchen habits reviewed with staff — what goes down the sink ends up in the trap

  • Plates and pans scraped into the bin before washing
  • Used cooking oil kept in a container for collection
  • Sink strainers in place and emptied into the bin
  • A slow or smelly drain is reported the same day

Questions

How full can a grease trap get before it is emptied?

That is for your water company, council or sewer authority, or the trap's maker, to say, and it is not the same everywhere, so the sheet prints no figure. Write the trigger and interval you work to at the top, and the depths you measure will show when you are getting close to it.

Does this cover an outside interceptor as well as a trap under the sink?

Yes. Write which one it is and where it is at the top. A large interceptor is normally emptied by a contractor, so use the done-by and ticket columns for their name and the waste ticket.
