What this sheet is for

Know at the end of a day what each line sold and whether the cash matches, and load the right amount next time instead of the same amount.

Who it is for

Street food stalls, hatches, trucks and pop-ups with a short menu and a till or card reader.

How to use it

  1. Fill in the date, pitch, staff and the float that went in the till.
  2. List each menu item and how many portions were loaded; write your price beside it.
  3. At close, count back and wasted, work out sold, and multiply for the value column.
  4. Count the till, take off the float, add card and other, and compare with the sales value.
  5. Note in the space below why any difference arose and what sold out.

Questions

Why is the price column blank?

Because prices are yours and change by event and by season. Writing the day's price in the column means the value column is right for that day even after the price has moved.

How is this different from the market trader record?

That is one row per market across a season, to compare venues. This is one whole day, line by line, to reconcile the till and plan the next load.
