The fillable versions have real form fields — open them in any PDF reader, type into them and save. Printing help.
Track each fryer's oil from day to day against your own trigger for changing it. It also shows the colour checks that help keep acrylamide down.
Chefs, fry cooks and managers in fish and chip shops, pubs, takeaways, cafes and any kitchen with one or more deep fat fryers.
2 pages, in this order:
Printed under the title: Each fryer listed once with its oil and your change trigger, then a line per fryer per day: skimmed, filtered, topped up, changed, tested, and the colour of what came out.
Your trigger, not ours. No oil life, frying temperature or test-kit limit is printed. When to filter or change depends on what you fry, how much, the oil and your supplier's or test kit's advice: write your own trigger for each fryer below. Check chips and other potato products against your colour chart, as frying them darker raises acrylamide.
Write-on lines: Kitchen or site · Week beginning · Oil supplier · Test kit, if used
Table, 4 rows: Fryer · Use · Oil type · Capacity · Change when · Kit limit
Table, 21 rows: Date · Fryer · Skimmed · Filtered · Top-up · Changed · Test · Colour · Cleaned · Notes or action · Initials

Because it depends on what you fry, how much, the oil you use and your supplier's or test kit's advice. A printed number would be wrong for most fryers. Write your own trigger for each one at the top, whether that is a test reading, a colour, a smell or a number of days.
That sheet is a daily safety look at each appliance: oil level, baskets, flames, valves and extraction. This one is the oil's own record, from skimming and filtering to a full change, with the colour of what was fried.
Make the opening cook look at every fryer and gas appliance before it is lit, and leave a record of who looked, what was wrong and who it was reported to.
Keep a running index of waste leaving the premises and of the documents that came back with it, so a request for records is a filing question.
Set out who cleans what and how often, with initials against each day so the rota is a record rather than an intention.
Give every fault on a fridge, fryer, oven or glass washer one line, so nothing is reported twice or forgotten once, and the manager can see what is still open.
Every sheet, binder, game and puzzle on Upkeep Papers is free to download, with no email and no account. Making them is not free: each one takes days of research, design and checking, and the site costs money to run. If something here saved you time, you can buy us a coffee. It is entirely optional: nothing is locked, and nothing changes if you don’t.
