What this sheet is for

Catch a ring, an uncovered cut or a dirty apron before the shift starts, not mid-service.

Who it is for

Head chefs, kitchen supervisors and shift leaders in restaurants, cafes, school and care home kitchens, and food production.

How to use it

  1. Write your two extra house rules at the top, such as no phones on the line or beard covered.
  2. As each person arrives, look at each point and tick it only when you have seen it.
  3. If something fails, put it right before they start and write what was done.
  4. If anyone reports feeling unwell, keep them off food and record it on the fitness to work record.

What is on the sheet

One page, top to bottom:

Printed under the title: One line per food handler at the start of each shift: work clothes, hair, jewellery, nails, cuts and fitness to work, seen by the supervisor and put right before they start.

Seen, not asked. Tick a check only when you have seen it, and put anything wrong right before the person starts. Uniform, jewellery, nails and dressings follow your own dress code: cuts usually go under a coloured, detectable dressing. Write any extra rules of your own in the boxes below and tick them in the two spare columns.

Write-on lines: Kitchen or site · Date · Supervisor · Rule 1 · Rule 2

Start-of-shift checks — one line per person; if a check fails, write what was put right

Table, 11 rows: Name · Time · Put right · Initials

Also printed: Uniform clean · Hair covered · Jewellery off · Nails short · Cuts covered · Fit to work · Hands washed · Rule 1 · Rule 2

Write-on lines: Anyone kept off food handling today (see the fitness to work record) · Reviewed by

Questions

Why does a supervisor tick it rather than each person?

Because the check is that someone has seen it. A tick from the person themselves only shows they remembered the rule; a supervisor's tick shows the plaster was on and the ring was off when the shift began.

Do we have to use all seven checks?

Use the ones that fit your kitchen and your own dress code, and the two spare columns for anything else you require. Leave a column blank rather than ticking something nobody looked at.
