Probe Thermometer Check Log

A free printable probe thermometer check log: each probe listed once, then every iced or boiling water check with its reading, tolerance and outcome.

First page of the Probe Thermometer Check Log — Catch a probe that has drifted before anyone trusts its readings. The sheet is also the evidence that every probe in the kitchen was checked.

What this sheet is for

Catch a probe that has drifted before anyone trusts its readings. The sheet is also the evidence that every probe in the kitchen was checked.

Who it is for

Anyone in a kitchen, food truck or small food business who takes temperatures with a handheld probe.

How to use it

  1. Give every probe an ID, mark it on the probe, and list up to four in the boxes at the top.
  2. Write in the readings your procedure expects in iced and boiling water, and the tolerance you accept.
  3. Check each probe at the interval you have set, and again after it has been dropped or knocked.
  4. Record the reading and how far off it was; adjust the probe if it can be, or take it out of use.
  5. Have someone verify each check, and list any replaced probes at the foot.

What is on the sheet

One page, top to bottom:

Printed under the title: The kitchen's food probes listed once at the top, then each check in iced or boiling water: the reading, how far off it was, and what was done about a probe that failed.

The reference and tolerance are yours. No reference readings or tolerances are printed. What a probe should read, and how far from it you accept, come from its maker and your own procedure; water also boils at a lower temperature the higher your site is, so write the figures that apply to you.

Write-on lines: Site · Check every · Tolerance you accept · Unit (°C or °F) · Iced water should read · Boiling water should read · Figures taken from · Probe 1: ID, type, where kept · Probe 2 · Probe 3 · Probe 4

Accuracy checks — mark each probe's ID on the probe itself

Table, 9 rows: Date · Probe · Method · Reading · Off by · Pass? · Action · Condition · Initials · Verified

Write-on lines: Probes taken out of use, and what replaced them · Reviewed by

Questions

Why does the sheet not say what the probe should read?

Because the reading in boiling water changes with your height above sea level, and the tolerance you can accept depends on the probe and your own procedure. Write both at the top from the maker's instructions, so every check on the sheet is judged against the same figures.

How is this different from the calibration record?

The calibration record is a register of every instrument on a site and when each was last checked. This is the running log for food probes alone: each check, the reading against the reference, and what happened to a probe that failed.
