What this sheet is for

Build your own run-time and yield figures, which after twenty batches beat anybody else's.

Who it is for

Home freeze dryer owners, small producers and preppers.

How to use it

  1. One line per batch, numbered.
  2. Record weight in and weight out — the difference is the whole point.
  3. Note how it was prepared, including thickness and any pre-treatment.
  4. Write what you would change while you still remember.
  5. Label and date everything that comes out.

What is on the sheet

The layout is fixed at a size that fits both A4 and US Letter, so the A4 and Letter files are visually identical and print at full size on either. Rows are set at a height that an adult can actually write a date and a few words into with a pen — most printable tables are built in a word processor and never tested with one.

Questions

What run time should I use?

Yours. It depends on the machine, the load, the altitude and the food, which is why no times are printed here. The log exists so that after a few batches you have your own.

Is freeze-dried food shelf stable?

That depends entirely on moisture removal, packaging and storage, and it is not something a log sheet can tell you. Follow your machine's documentation and recognised food safety guidance.
